Avocado Eggs
INGREDIENTS
- 2 avocados
- 4 eggs
- Salt and pepper to taste
DIRECTIONS
- Preheat oven to 425° F and lightly coat baking tray with oil
- Cut avocados in half, remove pits, and scoop out some avocado to create a well
- Crack a single egg into each avocado well
- Bake avocados for 10-15 minutes (until egg whites have set)
- Add a dash of salt and pepper to taste
- Take on the day with energy and protein
