Cheesy Garlic Roasted Asparagus
INGREDIENTS
- 1 lb asparagus spears
- 3 tablespoons of olive oil
- 4 cloves of garlic
- ¾ teaspoon of salt
- ¼ teaspoon of pepper
- 1¼ shredded mozzarella cheese
DIRECTIONS
- Preheat oven to 220°C (425°F).
- Mince garlic and remove the woody ends of the asparagus.
- Lightly grease a baking sheet with nonstick cooking oil spray and arrange asparagus on it.
- Mix together olive oil, garlic, salt and pepper in a large bowl. Drizzle mixture over the asparagus and toss to coat evenly.
- Bake for 10-15 minutes until the asparagus begins to get tender.
- Remove from oven and top with the shredded mozzarella. Broil for 4-5 minutes until the cheese melts.
- Add salt and pepper to taste and serve.
