Classic Tomato Soup
INGREDIENTS
- 3 lbs of fresh tomatoes, quartered
- 1 onion, diced
- 5 garlic cloves, peeled
- 3 tsp. dried herbs: basil, oregano, rosemary
- 3 tbsp. olive oil
- 2 cups of chicken or veggie broth
DIRECTIONS
- Preheat oven to 425 °F (220 °C).
- Spread tomatoes, garlic and onion onto baking sheet.
- Sprinkle with dried herbs, salt and pepper to taste.
- Drizzle with olive oil.
- Roast for 30 min., mixing half way through.
- Bring broth to a boil.
- Add roasted veggies to broth.
- Optional: Add a splash of heavy cream.
- Blend with hand blender until smooth.
- Dunk some grilled cheese and dig in!
