Grilled Cauliflower

INGREDIENTS

  • 1 head cauliflower, cut into thick slices
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 lemon zested and juiced
  • 2 tablespoons seasoned salt
  • ¼ cup chopped parsley
  • ¼ teaspoon red pepper flakes
  • ¼ cup chopped toasted walnuts

DIRECTIONS

  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. Remove the outer leaves from the cauliflower head. Cut off the bottom stem end, then cut the remaining head into 2 very thick or 3 moderate slices.
  3. In a small bowl, stir together the olive oil, lemon zest and lemon juice.
  4. Brush one side of each cauliflower slice with lemon-olive oil mixture and then sprinkle the brushed sides with half of the seasoned salt and half of the brown sugar.
  5. Place the seasoned side down on the hot grill, then brush the tops of the slices with olive oil mixture and season with the remaining salt and sugar.
  6. Cover the grill and cook from each side for 5-6 minutes until the cauliflower is tender.
  7. Remove from the grill, sprinkle with the red pepper flakes, parsley, and walnuts.
