Grilled Cauliflower
INGREDIENTS
- 1 head cauliflower, cut into thick slices
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 lemon zested and juiced
- 2 tablespoons seasoned salt
- ¼ cup chopped parsley
- ¼ teaspoon red pepper flakes
- ¼ cup chopped toasted walnuts
DIRECTIONS
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove the outer leaves from the cauliflower head. Cut off the bottom stem end, then cut the remaining head into 2 very thick or 3 moderate slices.
- In a small bowl, stir together the olive oil, lemon zest and lemon juice.
- Brush one side of each cauliflower slice with lemon-olive oil mixture and then sprinkle the brushed sides with half of the seasoned salt and half of the brown sugar.
- Place the seasoned side down on the hot grill, then brush the tops of the slices with olive oil mixture and season with the remaining salt and sugar.
- Cover the grill and cook from each side for 5-6 minutes until the cauliflower is tender.
- Remove from the grill, sprinkle with the red pepper flakes, parsley, and walnuts.
