Grilled Loaded Potatoes

INGREDIENTS

  • 10 potatoes
  • ¼ cup olive oil
  • ¼ cup butter melted
  • Salt and pepper to taste
  • 4 slices bacon cooked and crumbed
  • ⅓ cup sour cream
  • 2 tablespoon green onions

DIRECTIONS

  1. Spray the inside of 10 small sheets of tinfoil.
  2. Place a potato on a cutting board between two chopsticks. Slice the potato into ¼ inch slices, the chopsticks will prevent you from cutting all the way through.
  3. Repeat the process with the remaining potatoes. Place each potato on the middle of each tinfoil sheet, sprinkle with salt and pepper over the top; fold the tinfoil to enclose.
  4. Cook on the grill at 400 degrees until the potatoes are tender (approximately 25 minutes).
  5. Remove potatoes from the grill and open carefully.
  6. Portion out potatoes onto plates.
  7. Top with the sliced onion, sour cream, and bacon.
  8. Enjoy!
