Killer Cornflake Breaded Chicken
INGREDIENTS
- 4 boneless, skinless chicken breast halves
- ½ cup all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper
- Salt and pepper
- 2 large eggs
- 6 cups coarsely crushed cornflakes
- 3 tablespoons unsalted butter, melted
DIRECTIONS
- Preheat oven to 375°. Place foil on a baking sheet. Place chicken breast half between two sheets of plastic wrap. Pound chicken to an even ½-inch thickness. Mix flour, thyme, cayenne pepper, salt and pepper. In a second dish, whisk eggs. Spread cornflake crumbs on a second baking sheet.
- Dip chicken into seasoned flour, then dip in egg mixture. Remove chicken and dip into cornflakes. Transfer to baking sheet.
- Drizzle chicken with melted butter or hot sauce. Bake until cooked and crisp and enjoy your killer fingers.
