Mini Pepper Pizzas
INGREDIENTS
- 4 local green peppers
- 2 ¼ cups of shredded mozzarella
- ½ cup of pizza sauce
- ½ cup of finely grated Parmesan
- ⅓ cup of mini pepperoni
- Tablespoon of extra-virgin olive oil
- Kosher salt
- Black pepper
- Tablespoon of chopped parsley
DIRECTIONS
- Preheat oven to 177 °C (350 °F).
- Halve and core the peppers. Place them on a baking tray, drizzle with olive oil and season with salt and pepper.
- Spoon sauce into each pepper half. Sprinkle with mozzarella and Parmesan, and top with pepperoni. Bake for 10 to 15 minutes, until the peppers are crisp and cheese is melted.
- Garnish with parsley before serving.
