Mini Pepper Pizzas

INGREDIENTS

  • 4 local green peppers
  • 2 ¼ cups of shredded mozzarella
  • ½ cup of pizza sauce
  • ½ cup of finely grated Parmesan
  • ⅓ cup of mini pepperoni
  • Tablespoon of extra-virgin olive oil
  • Kosher salt
  • Black pepper
  • Tablespoon of chopped parsley

DIRECTIONS

  1. Preheat oven to 177 °C (350 °F).
  2. Halve and core the peppers. Place them on a baking tray, drizzle with olive oil and season with salt and pepper.
  3. Spoon sauce into each pepper half. Sprinkle with mozzarella and Parmesan, and top with pepperoni. Bake for 10 to 15 minutes, until the peppers are crisp and cheese is melted.
  4. Garnish with parsley before serving.
