Pea and Carrot Salad
INGREDIENTS
- 2 cups of local peas
- 4 medium carrots
- 2 teaspoons of honey
- 2 tablespoons of freshly squeezed lemon juice
- 6 tablespoons of extra virgin olive oil
- ½ teaspoon of salt
- ¼ teaspoon of freshly ground black pepper
- 2 tablespoons of chopped fresh mint
DIRECTIONS
- Peel carrots and cut thin slices on a diagonal.
- In a large bowl, whisk together the honey, lemon juice, olive oil, salt, pepper and mint.
- Add the carrots and peas. Toss well to coat. Taste and adjust seasoning if necessary.
- Transfer to a serving platter and garnish with a sprig of fresh mint.
