Raspberry Almond Oatmeal
INGREDIENTS
- 2 cups of unsweetened almond milk
- 2 tablespoons of olive oil
- 1½ cups of rolled oats
- ½ teaspoon of salt
- ¼ cup of coarsely chopped, dry-roasted almonds
- ¼ cup of honey (or maple syrup)
- 1 teaspoon of ground ginger
- 1 teaspoon of vanilla
- 1 cup of fresh raspberries
DIRECTIONS
- Preheat oven to 350 °F.
- In a large bowl, combine the oats, ginger, salt and chopped almonds.
- In a separate bowl, whisk the milk, honey, oil and vanilla together.
- Add to the oat mixture, stirring until it’s combined. Fold in the fresh raspberries.
- Spread the oat mixture into a baking dish and bake for 30 minutes until oats have set.
- Remove the oatmeal from the oven and let it sit for 10 minutes. Top with berries and drizzle with a little honey or maple syrup if desired.
